Description

San Colombano DOC Riserva Roverone is a still red reserve wine produced only in favourable vintages, expressing the character and vocation of the San Colombano hills. Made from a traditional blend of Barbera, Croatina, Uva Rara and Merlot, it combines structure, elegance and ageing potential. Intense and refined, it offers ripe fruit, spice and a velvety yet firm palate, making it particularly suitable for rich meat dishes and mature cheeses.

  • Taste: Firm, austere yet velvety, spicy, properly tannic and with excellent structure.

  • Vinification: The grapes are hand-harvested in small baskets, transported to the winery in small harvest carts and gently destemmed. Classic red vinification takes place in 150 hl stainless steel tanks using techniques that support traditional methods and allow targeted pump-overs in a protected environment, keeping skins repeatedly in contact with the must-wine for at least fifteen days.
